The Pappas Ranch Story

Louis Pappas arrived from Greece in 1905 to find opportunity in America. He and his wife Flora eventually settled in Tarpon Springs where they opened the original Louis Pappas Riverside Café. With much of the surrounding area still quite rural, Louis acquired several acres of land on the Pinellas-Pasco County line where he enjoyed his true passion of farming. He raised livestock and chickens, grew fresh vegetables and cultivated his orange groves. He named it Pappas Ranch where he and his family enjoyed many years of relaxation away from their demanding restaurant responsibilities. It was on the Pappas Ranch that Louis taught his children the importance of freshness, providing farm fresh products from the ranch to their many loyal patrons. While the next generations continued to hold on to the traditions at the ranch, progress eventually led the Pappas family to develop or sell off much of the land. Several acres of Pappas Ranch still remain where the family continues to gather to perpetuate the past.

Avid hunters, the Pappas Brothers threw an annual Pappas Game Dinner where four to five hundred would gather to sample their game killed each year. Barbecue was ablaze on huge outdoor grills or slow-smoked to perfection in homemade drums. The presentation of good food and the camaraderie amongst old friends was something people from all over Florida looked forward to each year. It is with the same tradition we present this Pappas Ranch - where we hope you enjoy the warm atmosphere of our family’s hospitality.









Meet Louis Pappas

I am a third generation member of the Pappas Family and grew up with a love for cooking delicious food. My grandfather, Louis M. Pappamichalopoulos served in France as an army chef in General Pershing’s “Wildcat Division” during World War I. It was there that he created his own version of a Greek salad by adding potato salad to sustain the troops during hard times. In 1925 my grandfather and grandmother, Flora, affectionately known as “Mama”, established the original Louis Pappas “Riverside Café” in Tarpon Springs, Florida. With a handful of employees on sawdust floors, they opened their humble café, specializing in fine Greek-American cuisine and the Louis Pappas Famous Greek Salad tm. Potato salad at the bottom of a Greek salad soon became commonplace and the salad itself became internationally known. The success of the Louis Pappas Greek Salad tm has lasted for almost a century where it remains the most popular dish at our Louis Pappas Market Café fast casual restaurants in the Tampa Bay area.

Without any formal culinary education, I was taught the “old school” ways of Greek cooking by my father and uncles as I rose through the ranks from busboy to CEO at Louis Pappas Riverside Restaurant. I have become an accomplished self taught chef who taking abundant pride in continuing my grandfather’s tradition serving high quality food made from only the freshest and purest of ingredients. It would be an honor to share my family’s appreciation of delicious foods with you and your family.
